To edit your auto populated text click on the "convert smart fields to text " icon on the right of the text box. The brochures are tied to a specific page count - this is required for printing, keep this in mind before you get started. You can change the cover using the additional layouts but be sure to delete out the current cover there and make sure the rest of the spreads are not impacted.
